Šimák Pezinok Castle has undergone extensive reconstruction and is a truly beautifully reconstructed historical monument, which, in addition to the hotel, also offers several gastronomic establishments. At Palffy restaurant, the concept of food preparation is based on a combination of fresh, local ingredients and French dining in a modern style. Premium gastronomy and a beautiful interior appeal to the gourmet public and hotel guests. The chef’s approach is unique – he serves Small Carpathian dishes with a French touch. Chef told us: “If you come to us, it’s for an experience like going to the theater, cinema or a concert. I cook from the heart and I’m a patriot, so I look for ways to create excellent flavors from home-grown ingredients, fine-tuned with wine and create our shared experience.” We tasted the four-course menu and we really have to say that all the dishes, as well as the service itself, were an experience.
